Blackberry Cheesecake Muffins



This morning we had a sweet tooth and wanted something decadent before starting our day. This is what we came up with. Unfortunately, I think we may have started a bad, but Oh-So-Delicious, habit!

Blackberry Cheesecake Muffins

1 cup fresh or frozen berries
3 eggs
¾ cup sugar and 1/8 cup sugar
5 oz. cream cheese
4 tbsp. Butter
1 cup milk
1 ½ tsp vanilla
2 ½ tsp baking powder
2 cups flour
½ tsp salt

Preheat oven to 400*

Blend cream cheese, 1/8 cup sugar, one egg, and half of the vanilla until smooth. Set aside.

Melt butter, then add the other half of the vanilla, milk, and two remaining eggs. Mix well.

Add the flour, salt, 3/4 cup sugar, and baking powder. Mix. Gently fold in fruit.

Spoon flour mixture into greased muffin tins filling each evenly. Then add an equal spoonful of the cream cheese mixture on top of each.

Bake for 20 minutes. Enjoy!
